Alternative part 2: Finishing off vanilla cupcakes- buttercream icing

First of all I would like to say a big sorry for being gone for such a long time but now I’m back and posts will be coming your way more often

Anyway on with baking and this time the theme is Buttercream icing

A couple of days ago I made some plain Halloween cupcakes (vanilla) with an orange coloured icing and some even had some Halloween shapes on. E.g. Ghosts, Pumpkins and haunted houses.

Anyway on with the recipe. This one is from a bake off book

You will need

125g unsalted butter
400g icing sugar
3-4 tablespoons milk

Put the soft butter into a mixing bowl and beat with a wooden spoon or an electric mixer until paler in colour and very creamy. Sift the icing sugar into the bowl. Add the milk. Beat until very smooth and thick

If you want a coloured buttercream icing then at the end get a cocktail stick and put into the colouring before adding to the mixture and beating thoroughly.

(TheBakerKid tip: use the icing immediately because otherwise the icing will be too firm to put onto your cakes and will not come out how you want it to.
